Our Junmai Kimoto, released in 1983, was the result of decades of effort beginning in the 1950s, when the 8th Shichiuemon Ohta revived the traditional kimoto method after wartime decline. Despite limited polishing techniques and no cooling equipment, he pursued the challenge of creating junmai sake. Advances in rice polishing and temperature control later made it possible, and his long dedication led to the birth of our Junmai Kimoto.
