DAISHICHI

Daishichi Shuzo is a historic sake brewery founded in 1752 in Nihonmatsu, Fukushima Prefecture. It is one of the very few breweries in Japan to exclusively use the traditional kimoto brewing method for every sake it produces, a slow and labour-intensive technique that yields rich, complex, and deeply savoury sake.
