| Kaido is a distinctive imo (sweet potato) shochu from Hamada Shuzo, blending Koganesengan sweet potato with 100% Japanese rice koji and black koji for a uniquely rounded character. It has a soft, gentle mouthfeel with real umami depth and a clean, refined aftertaste — a mild sweetness from the potato balanced by the rice base. Awarded Gold at the Monde Selection in both 2021 and 2022, Kaido pairs especially well with rich dishes like wagyu or grilled beef.
