| Ayahibiki is a contemporary imo (sweet potato) shochu from Satsuma Shuzo in Kagoshima, brewed using clean sake yeast and low-temperature fermentation. This gentler process gives it a refreshingly light, fruity character with a distinctive green apple aroma — a departure from the earthier, smokier style of traditional Shiranami.
