A Brewery That Keeps

Nishibori Sake Brewery was founded in 1872 in Oyama, Tochigi, along the historic Nikko Road, by a merchant family from Omi (today’s Shiga). Four of its buildings are Registered Tangible Cultural Properties of Japan, and the kura honours inherited craft while continually questioning how sake can evolve.
