Our story

He travelled Japan.
Then he found this water.

Founder Matabee Koyamaya mastered sake brewing in Nada and Fushimi before discovering fine water in Sashiogi, Saitama. In 1808, that discovery became a brewery — and a commitment to quality that continues today.

Saitama terroir

One spring.
One address.
Since 1808.

Saitama’s winter temperature swings support brewing, while pure underground water gives the sake a clean foundation. Koyama Honke brings that place into every bottle with rice-led flavour and poised balance.
