Our Story

The Mountain.

Around 1635, the second-generation brewer Sōtaku Konishi saw Mount Fuji while carrying sake toward Edo. Moved by its noble snow-capped form, he named the family’s clear sake “Shirayuki” — white snow.

Blessed by pure underground water and a cool, dry climate, Itami became the birthplace of morohaku — Japan’s first clear sake refined with polished rice for both kōji and the main mash.
