Our Story

The Gods Built
This Place for Making Sake.

At the foot of Mt. Hakkai, winter buries the land in deep snow. That snow becomes exceptionally soft water, while the cold creates the quiet conditions needed for precise brewing.

This is Minamiuonuma. This is where Hakkaisan begins.

Place & Water

Where Snow
Becomes Sake

Heavy snowfall on Mt. Hakkai filters through ancient stone and volcanic rock for decades, emerging as crystal-clear, ultra-soft water.

Brewing Philosophy

Hand-Made Koji. No Exceptions.

Hand-Made Koji

Every grain is touched by hand. Toji and kurabito craft koji the traditional way.

Daiginjo Standards

Precision at every step creates range, clarity, balance and quiet elegance.

Yukimuro Snow Ageing

Snow keeps sake at a stable 3°C, surrounded by deep snow and complete stillness.

A Simple Belief

Better Sake.
For More People.

Hakkaisan brews clean, refined, food-friendly sake that elevates everyday meals without overwhelming them.
