At the foot of Mt. Hakkai, winter buries the land in deep snow. That snow becomes exceptionally soft water, while the cold creates the quiet conditions needed for precise brewing.
This is Minamiuonuma. This is where Hakkaisan begins.

Deep winter snow on Mt. Hakkai melts and is gently filtered by the mountain, rising at its foot as Raiden-sama no Shimizu — the exceptionally soft spring water Hakkaisan brews with.
Brewing Philosophy
Hand-Made Koji. No Exceptions.
Hand-Made Koji
All the koji used in Hakkaisan sake is made by hand. Toji and kurabito craft it the traditional way.
Daiginjo Standards
Precision at every step creates range, clarity, balance and quiet elegance.
Yukimuro Snow Ageing
Aged in a snow storehouse that holds up to 1,000 tonnes of winter snow, keeping the sake at a steady temperature of around 3°C.
