The brewery that chose honesty over convenience.

Founded in 1625 in the samurai city of Kanazawa, Fukumitsuya has brewed beside the same spring for four centuries. In an era of shortcuts and additives, the brewery chose a more exacting path.

Since 2001, every sake made here has been Junmai: rice, koji and water only. No added alcohol. No compromise.

One hundred years underground.

Rain and snow from sacred Mt. Hakusan travel slowly through ancient shell-rich strata before reaching the brewery. The journey gives this naturally filtered water the minerals essential for fermentation.
